b. Directions
  1. Take a medium-sized pan

  3. Add makhana and roast for a good 10 to 12 minutes on a low flame till they become crisp and crunchy.
  4. Add turmeric powder, chili powder, and rock salt.
  5. Turn off the flame and stir the whole mixture properly.
  6. Now add chaat masala to the makhana and mix it again.
  7. Roasted makhana is ready to be served or can be stored in an airtight container.

2. Makhana Kheer

a. Ingredients
  • 3 cups of makhana
  • Sugar
  • 4 cardamom pods
  • A few saffron strands
  • 500 ml of milk
b. Directions
  1. Heat 2 to 3 tsp of ghee in a pan.
  2. Roast 1 cup of makhanas and 10 to 12 cashews until they get golden. Keep them aside and let it cool down for some time.
  3. Once the roasted makhanas are at room temperature, blend it in a blender.
  4. Heat 500 ml of milk in a saucepan. Let the milk boil but do not forget to keep stirring it constantly.
  5. Crush for pods of cardamom and extract the seeds.
  6. Mix the cardamom seed with saffron strands and crush it until it is mixed well.
  7. Add the mixture of makhana, cashew, and sugar according to taste and boil them thoroughly.
  8. In the end, add a few lotus seeds on top, stir well and serve hot.
